Super Simple Victoria Sponge

When it comes to baking I'm not a professional by any means but I love the process and find it so therapeutic. That being said, I like the recipes to turn out right so the simpler the better. I usually play it safe and stick to recipes I know inside out. One that almost always works perfectly is a victoria sponge. There's not much room for error. So, here's the easy peasy recipe I like to use:

Ingredients
220g Unsalted Butter
220g Caster Sugar
4 Eggs
2 Teaspoons Vanilla Extract
220g Self-Raising Flour
150ml Double Cream
Strawberries
Method
1. Preheat the oven to 180 degrees and line 2 round sponge tins.

2. Cream the butter and sugar together using an electric whisk or by hand.

3. Add the 4 eggs and vanilla extract and whisk again.

4. Fold in the sifted flour until the cake mix is smooth. If it's too thick, add milk.

5. Divide the mixture between the 2 cake tins and bake for 10-15 minutes.

6. Whip the double cream and sandwich between the sponges. Most people would use jam in their Victoria Sandwiches but I prefer to use strawberries instead.
