12 Days Of Slackmas | Terry's Chocolate Orange Cupcakes

IT'S DECEMBER!!! CAN YOU BELIEVE IT?!!
If you can't tell already, I'm completely estatic that Christmas is so close and I've been planning and prepping chrimbo bloggy stuff since back in July. Yes, I'm that person who talks about Christmas all throughout Summer. I didn't want to just go with the basic "blogmas" plan and I've decided to go with "12 Days Of Slackmas". A) Because my second name is Slack (u get the pun) but also B) I know I'll never be able to upload a post everyday throughout December. I wish I was as good as a blogger as some of my lovely blogger friends but I'm no where near as creative as them and can't come up with 24 ideas. It would be impossible.

SO here's what (I'm hoping) will happen:
I have written 12 Christmassy themed posts that will be going up every 2 days. The first post going up on the 1st December and the last going up on the 23rd. There's a mix of everything to be honest. A few posts about baking, makeup lifestyle and gift ideas.
For my first instalment of 12 Days Of Slackmas I wanted to kick it off with one of my favourite recipes; Terry's Chocolate Orange Cupcakes.

I'm a bit obsessed with terry's chocolate orange at Christmas. It's one of the best things about this time of year. This recipe is easy (the way I like it) and makes 12 of the yummy cakes.



Ingredients For The Cupcakes
3 Eggs
150g Butter
120g Self Raising Flour
150g Caster Sugar
30g Cocoa Powder
Grated Zest of 1 Orange OR 2tsp Orange Extract
175g Chopped Terry's Chocolate Orange

Ingredients For The Buttercream

350g Icing Sugar
150g Butter
Orange Food Colouring OR Orange Colour Gel
Orange Flavour Extract
Chopped chocolate orange/chocolate chips

For Decoration (optional) :

Chocolate Orange Segment
Melted Chocolate


Method
1. Preheat your oven to 180 degrees and line your muffin tin. I find it easier to weigh out all of my ingredients and chop anything that needs it beforehand just so I can grab and go much quicker.

2. Beat the butter for a few minutes until pale and fluffy. Then add the sugar and beat together for another 2 minutes.

3. Add the flour, cocoa powder and eggs and beat the mixture again. Start off slowly and increase speed, being careful not to over-beat the batter.

4. Mix in the chopped chocolate orange and the orange zest/flavouring and finally spoon the mix into your muffin cases.

5. Bake for 15-20 minutes until cooked through (you can check with a skewer and you'll know they're done when the skewer comes out clean) and leave to cool to complete.

6. While the cakes are cooling, make a start on the buttercream by beating the butter for 3 minutes until smooth. 

7. Sieve the icing sugar bit by bit (beating each time, you don't want it flying everywhere) and add the orange flavouring and colouring. Add your chopped chocolate orange pieces or chocolate chips. I will say, try to make them a small as possible so they fit through the piping nozzle. It's a nightmare otherwise.

8. Pipe your buttercream onto the cupcakes and decorate to your choosing. I chose half a chocolate orange segment.
